| Description | The tradition of tapping the trees at Coggeshall has been going on for at least two decades now. Guests will see the process of extracting sap from the tree, all the way to sugaring down, which is removing the water from the sap, only leaving sugar behind. Maple sugar had obvious connections to local foodways, but our interpreters will explain how it impacted and was impacted by the environment, land usage, trade, and early abolitionist movements. |
